Why is it that an Israeli company can make and profit from malware that is then used to spy on world-leaders, journalists and countless others -- yet if I was to do the same then it is almost a dead certainty that I'd be locked up for a good length of time for my troubles?

Yep, it's that old backbone of the political world: hypocrisy

One set of rules for some, another set for us.

Perhaps this is why I have contempt for the rule of law sometimes.

A lot of people think they're 'free' - they just haven't reached the end of their leash, yet. The Covid lock-downs might have been the first constraint that the "but I want it and I can afford it'' set have ever really experienced.

As long as our social bindings are fictional ('countries', 'economics', 'laws' etc) the systems can be rigged and the rest of us just wonder meekly why some people were born so lucky. But there's a new sheriff in town, and this one is based on 'reality', and no amount of ETS/feebate paper-shuffling is going to stop it. There's no need to wonder what the Easter Islanders were thinking as they cut down the last tree; or bought the last ute.

This topic has been addressed by international bloggers several times over.
You are right to think that emails are being monitored.
If you are in a 5 eyes country, everything is being monitored. We are already in the Orwell world - it just hasn't been 'officially' declared.
Israel has shown many times over that it doesn't adhere to international law or the laws of other nations. Nobody is doing anything about it because they are afraid of the consequences (or don't see what they are).
